Proctor Silex 22608Y Cool-Wall Toaster Review

I've tried several toasters that were substantially more expensive and have determined that this basic, no frills Proctor Silex does a much better job of toasting bread. In fact I've done lots of research and have learned that all of the button functions on more expensive toasters are actually not necessary. For example: Cancel Button - not necessary, you simply lift up the lever to stop the toasting. Defrost Button - not necessary, all it does is lengthen the toasting time, so all you need to do is turn up the shade selector which does the exact same thing. Reheat Button - not necessary, just turn down the shade selector to the light setting and it will warm previously toasted bread without over-browning it. Bagel Button - there are 2 types of bagel functions out there, one toasts just one side of the bagel (which I don't like), and the other type toasts both sides and extends the toasting time (my preference). So for a bagel just turn up the shade selector which will extend the toasting time.

Having said all of this, I highly recommend the Proctor Silex 22608. It toasts bread evenly, and when using 2 slices, both sides of the bread are fairly uniform. It's versatile too as the slots adjust well for thin bread, thicker bread, english muffins, small bagels, and even larger bagels fit easily. Another nice feature is that it uses just 1 moving guide in each slot to keep the bread vertical. As a result the bread is not pinched together tightly between 2 metal guides so there are less grooves and white lines on the sides of the bread when it's done. It almost looks like it was done in a toaster oven. And the chrome cabinet with black side trim looks great on the kitchen counter.
I read where Consumer Reports rated this toaster #3 and I can see why. So save your money and get back to basics with the Proctor Silex 22608 !

L'Equip 760200 NutriMill Grain Mill Review

L'Equip 760200 NutriMill Grain Mill
Average Reviews:

(More customer reviews)
This review was originally posted to thefreshloaf.com by Mike Avery
I've owned a Nutrimill, a Whispermill and now own a WonderMIll and a KitchenAid mill.
I started with the KitchenAid mill. I really like it for a number of reasons. I like that it extends the use of my KA, and that it was cheaper than the rest of the mills. Also, I like being able to produce cracked wheat and rye chops. In both cases, you want the grain lightly broken and still identifiable. In "The Bread Builders" the authors joke that when you make rye chops, you want three pieces out of the mill for each two that go in. Pretty much true. However, the down side is that it's difficult to produce finely milled flour. Like othes here, I use the two pass system.
Which is what led me to the WhisperMill. It ground grain very finely and had little in the way of adjustment. It went from very fine to very, very fine. No cracked wheat. No rye chops. And, it seemed that the flour quality wasn't as good for bread making purposes as I wanted. However, it was able to make flour in a single pass and could be used for extended periods of time.
That led me to buy a NutriMill because of its advertized and much ballyhooed wider range of settings, a larger hopper, and the claim that it was able to handle starts and stops with grain in the hopper, which the WhisperMill does not handle. Sadly, the wider range of settings is not terribly releavant. Instead of going from very fine to very, very fine it goes from fine to very, very fine. No cracked wheat, no rye chops, and still the breadmaking characteristics of the flour seemed lacking.
When I sold the bakery, I sold the NutriMill and sent the Whispermill off to be overhauled - employees had turned it off and on with grain in the hopper a few too many times. By this time, the Whispermill company had died and been resurected as Wondermill, so now my mill is the essentially identical wondermill. Same comments apply as to the WhisperMill.
The Whisper/Nutri.Wonder mills have larger hoppers than the KitchenAid and can be used pretty much continuously. In baking classes, I've seen a friend grind as much as 25 pounds without stopping, except to empty the output hopper. I think some people have modified their Wondermills to feed into a trash can sized hopper.
The common thread through the Whisper/Nutri/Wonder mill is that they are all micronizer mills. The grains are sent into spinning wheels that are turning at around 45,000 rpm and the grain explodes into powder.
This has implications. A number of implications. First, the output is homogenous. If you grind grain with a KitchenAid or similar maill you can sift out the bran and make whiter flour, Your flour will have flecks in it, which I find attractive. You cannot do that with micronizer producd flour, the particle size is far moreconsistent.
Next, the micronizers produce more damaged starch than steel or stone wheels. Heartland Mills says, "When wheat is milled into flour some of the starch granules in the endosperm are broken. This damaged starch absorbs much more water than the undamaged granules. If too little damaged starch is in the flour, it will be difficult to mix normal to high-hydration doughs. If there is too much, the flour will exhibit high absorption, but the loaf may flatten at the end of proofing as the excess water is released. In between these extremes, as damaged starch increases, absorption will go up, but at the expense of extensibility and overall dough strength."
Yin and yang. Black and white. Teeter and totter. Sweet and sour. Most things need a balance to work well. Most of the people I know who use mills to grind their own flour look more at nutrition than bread quality. They tend to serve bricks rather than well risen loaves. And the micronizers do support that pretty well. My observations of contemporary America is that few of us seem to be malnourished.
However, I know that some people are concerned about trace mineral deficiencies. Minerals are not depleted in the whole grain flours sold on the shelves. Some people are concerned that whole wheat flour goes rancid quickly after milling. To some extent that is true, but I am not convinced that is significant if you buy flour from a merchant with quick turnover of their stocks.
Other people feel freshly ground tastes better. I won't argue that point, as there is no disputing taste.
The bread making characteristics of the stone or steel wheel mills seems to be higher than from the micronizer mills. However, the steel and stone mills have issues too. The KitchenAid is limited as to how much it can make in a single run. The KA's motor will get hot. Like other posters, I make flour in two passes. I will grind as much as 5 pounds, let the mixer rest, and then make another pass. This is OK for home use... mostly. Steel and stone mills such as the Retsel and Sampo are considerably more expensive, but are said to produce much better flour, and can make coarsely ground grain as well.
You can find Retsel and Sampo dealers on line, check Google or bizrate.
If you have a micronizer mill, you can work with your recipes to get the best results you can. First, be patient. Let the flour absorb the water. My 5 minute knead, 5 minute rest and 5 minute knead regimen works very well here. These breads really benefit from the use of vital wheat gluten. I use about 5 or 6% as a baker's percentage. If you go much higher, the bread can acquire a gummy texture that most people find objectionable. I suggest using an American organic vital wheat gluten, such as Bob's Red Mill as the Chinese gluten has been contaminated in the recent past.
Hope that helps,
Mike

Why mill your own flour, when it's so readily available?Commercial mills remove 30 percent of the wheat kernel, removing the most nutritious part of the grain to make white flour.Commercially milled flour also removes all of the wheat germ oils to prevent it from going rancid and preserving the flour's shelf-life.Ninety percent of the nutritional value of the wheat berry is contained in the wheat germ. Wheat germ oil has almost no shelf life and becomes rancid very quickly. Rancid oil is a carcinogen; government health regulations require the removal of the wheat germ oil from all commercially milled flours to ensure safety. Milling your own flour not only ensures that your flour is as nutritious as it can be, it has a wonderful taste that is lost to commercially made whole-grain flour.Whole grains are important for numerous reasons: strokes, heart attacks, clogged arteries and cardiovascular problems can be prevented when whole grains are eaten regularly. The L'Equip NutriMill is a wonderful way to add nutritious grains to your healthy diet. With it's 20 cup capacity, variable texture control, quiet operation and easy to use self-cleaning milling chamber, you're minutes away from that first batch of fresh-baked bread.

Patisse Steam Pudding Mold, 2-Liter Review

Patisse Steam Pudding Mold, 2-Liter

I had a lot of worries about making the Christmas pudding this year. A few years ago I had attempted to make the pudding and I had another mold and I failed miserably. The pudding just stuck to the mold and I was rather afraid of attempting to make it again. I have since married an Englishman who doesn't think it is Christmas unless there is pudding and of course we received a pudding mold as a wedding gift. This mold help me conquer my fear of making Christmas pudding. It created the perfect dessert. (complete with the flame) The mold is easy to clean and very simple to open and close. It does of course become very very hot when it has been steaming for several hours. Which is a great sign of it conducting the heat well and cooking the pudding. I will definitely be using this every Christmas for years to come!

Waring Pro WTO150 4-Slice Toaster Oven with Built-In 2-Slice Toaster Review

Waring Pro WTO150 4-Slice Toaster Oven with Built-In 2-Slice Toaster
Average Reviews:

(More customer reviews)
I've done a ridiculous amount of research on toaster ovens, trying to find a better quality one that does not have a nonstick coating (which releases poisonous gas when heated) on the interior of the oven or on the bake pans. I was very happy to find that the Waring model is nonstick-free. (For those who care, the interior is aluminized steel.) I've had the toaster oven for only a week, but so far it works very well. It has a nice solid, industrial feel to it - nothing feels cheap. The dimensions are actually 19" wide,11" deep, 9" tall - the measurements given in the description are way wrong. My husband and I really like the separate toaster slots on top and use them all the time. The interior of the oven is roomy - enough to fit 4 or 5 baked potatoes or 4 slices of traditional-size bread or 2 slices of oversize sandwich bread. I've used it to bake potatoes, broil bacon, brown a chicken and make toast - everything came out fine. The only complaints I have are really just annoyances. First, you can't use the oven without setting the timer, which I guess is a safety feature, because when the timer goes off the power shuts off. But this means if you want to cook something for a couple hours you need to be on the ball and reset the timer to continue baking. I rarely use it for more than 30 minutes so this is not a real problem for me. Second, the rack and bake pans are a pretty tight fit and when I need to change their position it takes a few seconds to line them up right - once I do they go in smoothly. But I wonder if this will be more of a problem in the future when everything gets a bit sticky and warped. I guess I'm skeptical about toaster ovens after reading so many terrible reviews of different brands and models, but I'm happy so far. I hope this one lasts 15 years like my Black & Decker that just gave out.
5/6/10 Two months later, and we have a small problem. The toaster lever won't stay down anymore if the toast 'doneness' knob isn't turned on just before I try toasting (in other words, I can't just leave it on and set to the shade I want). I'll leave my 4-star rating for now, because it has worked consistently if I start from the off position, then turn the knob on, then toast. But I didn't need to do this before. The oven still works fine and I've had no trouble with slowness, as reported by others. If a cookie recipe says 350 for 9 minutes, that's how long it takes with this oven.

Perfect as a second oven or as an energy-efficient alternative to turning on the full-size oven, this countertop appliance offers a large 0.45-cubic-foot capacity that can accommodate up to four slices of bread at a time. Its user-friendly control panel consists of three knobs. The top knob controls the function--choose from bake, broil, or toast; the middle knob adjusts the temperature up to 450 degrees F; and the bottom knob allows for setting the timer up to 30 minutes, as well as selecting the shade setting when toasting bread. Best of all, the toaster oven features a built-in two-slice toaster, which makes it possible to bake, broil, or toast in the oven while simultaneously toasting bagels, bread, English muffins, frozen waffles, and other favorites in the toaster. The toaster offers a simple lowering lever, its own light to dark shade settings with a "cancel" option, and a "bagel" button for warming the outside while toasting the cut side of bagels. Other highlights include 1500 watts of power, an "on" indicator light, a see-through oven door to monitor the cooking progress, and brushed stainless-steel housing for an attractive addition to any kitchen counter. A broiling pan and drip tray come included. The toaster oven and toaster measures approximately 13-1/5 by 30-1/5 by 9 inches.

I saw this board advertised in Fine Cooking magazine and thought it would be great for serving the smaller sized frozen gourmet pizzas. After seeing it, I decided the wood is too beautiful to use a pizza cutter on, I don't want to scratch it. It will be great for serving cheeses when I entertain, and I still may use it for serving those pizzas - I'll just have to slice them on something else first.

Zyliss is a Swiss manufacturer of small kitchen utensils. The design, quality, and reliability is comparable to and sometimes better than Oxo, but Zyliss has a slightly different product range and a style of its own (Zyliss uses more color whereas Oxo has a more black-and-white approach). I bought the sandwich knife because I was tired of using tableware knives or paring knives. The Zyliss knife has been excellent for its stated purpose. It is wide enough that it is more handy than other knives for spreading mayonnaise or cream cheese. With its serrated edge, it can also do small cutting tasks (such as completing the slice on pre-sliced bagels). The pricing is very reasonable for a knife of this sort and quality. The yellow-orangish grip color is attrative although a departure from my kitchen decor (such as it is). This is definitely a keeper, something that will be frequently used and appreciated.

Made in the USA, which is always a plus for me, thick and a bit heavy. I also noticed it doesn't slide on the oven racks as easily as the cheapers ones did. But....from what I can see, I expect this product to give me years of use. I've tried cheaper ones and they rusted out within the first year! I really like that I can shape the loaf right over the insert, then set it into the holder with ease. Removing the cooked loaf is just as easy to do. I've only used it twice but I see no reason to need another one. Both times there was plenty of grease left under the insert, not touching the loaf at all. I really love this loaf pan!

We looked high and low for a scraper I could use comfortably to clean caked on food off with. I have arthritis in my hands and the usually scrapers are tiny little hard plastic things I can't grip most nights.
This scraper is much larger than you might expect from the picture. It fits very nicely in my hand. Because it is silicone, it will not damage your cookware no matter how you are using it. It fits securely in your hand so when you are scraping out a bowl of batter or whatever, it won't be slipping out of your hand in such a way that you end up contaminating your food with your hand, or covering your knuckles in cake batter.
We've decided to go ahead and get a few more of these - one to keep by the sink for scraping off cooked-on foods, one to use for scraping bowls with meat products - like when using ground beef for burgers or meatloaf, and one to use for things like batter and such.
Another added bonus to the silicone - it is heat resistant, so you can use it to scrape sauces, gravies and the like out of hot pans. Particularly handy if you're trying to make a roux and want to loosen up all the little cooked bits off the bottom of your pan before adding your flour.

After an extensive search for a non-stick, sturdy biscotti pan I ordered this pan. I have been very pleased so far.I have tried several recipes and all of them have come out of the pan easily without leaving pieces behind. I wish all of my bakeware released so well. I use a light coat of cooking spray. The pan washes up great in the sink, have not tried it in the dishwasher and probably will not do so,clean up is a snap. The pan does not warp, quite sturdy like the comercial grade chicago metallic pans. I was considering the chicago metallic biscotti pan, but really wanted non-stick. The ribbing in the USA pan helps with heat circulation and to release the biscotti. So far the coating looks durable, using silicone or teflon spatulas I expect this pan to last for many years. I make a quick run around the inside with a spatula, turn the pan upside down and the bisotti pop out in one piece. This pan makes baking biscotti so easy that I'm ordering a second pan so that I can make more than one variety at a time. My co-workers have said they've enjoyed my pan almost as much as I do because I've been keeping them supplied with fresh biscotti as I try out different recipes. I used to think making biscotti just sounded like too much bother what with shaping logs, getting the size just so, and getting the dough to bake evenly. No so with this pan, pat the dough flat in the pan and provided you can cut evenly each piece is the same size and shape. I will be checking out other USA pans.
